Yum! Apple crumble is the perfect sweet treat to fill your home with the smell of baking.

For the apple mix you will need:

1 kg (or about 7) apples (you can use any kind you like – green apples will be more tart and red apples will be more sweet)
1/2 cup caster sugar
1 tablespoon plain flour
2 tablespoons lemon juice (or water, if you don’t have any)
1 teaspoon ground cinnamon

For the crumble topping you will need:

1 cup flour
1 cup brown sugar
1 cup rolled oats
1 tsp ground cinnamon
125g butter (melted)

Cooking with Lucy: Home Made Potato Gnocchi

This home made gnocchi recipe is the perfect warming dish for a cool Autumn evening.

Gnocchi are super easy to make – in fact, you will only need four basic ingredients!

These cute fluffy pillows of pasta can be served with a creamy mushroom sauce for a seasonal flavour, or with a classic tomato and basil sauce if you prefer.

You will need:
– 4 or 5 potatoes
– 2 cups of plain flour
– 1 egg
– 1/4 cup parmesan cheese
– salt and pepper to taste
– sauce of your preference to serve

Cooking with Lucy: Pancakes

Yum! Make these easy pancakes for a perfect Sunday morning breakfast or Mother’s Day treat.

What you will need:

  • 1.5 cups flour (+ 3.5 teaspoons of baking powder if your flour is not self-raising)
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • 3 tablespoons butter (+ extra butter for greasing the pan)
  • 1.25 cup milk
  • 1 egg
  • lemon, sugar, maple syrup, honey, or any other topping you’d like to serve with your pancakes

Lucy also adds some mixed berries to her pancakes – feel free to chop up your favourite fruit to give these pancakes a twist!

Lucy’s Home-Made Bikkies

Brr – Autumn is definitely setting in! Why not make some simple bikkies to warm your home and fill it with the sweet smell of baking? Lucy will show you how to make these easy, 4 ingredient bikkies and then decorate them.

What you will need:

  • 250g butter (at room temperature)
  • 1 cup of sugar
  • 1 egg
  • 2 cups of self raising flour (or 2 cups of plain flour + 3 teaspoons baking powder)
  • icing sugar, food dye, and things to decorate your bikkies (e.g jelly snakes, chocolate, etc)
  • Measuring cups
  • a mixing bowl
  • Some energy to beat the butter! (or an electric beater)
  • baking paper
  • baking tins
